International Holiday Cookies: Italian Lemon Ricotta

Ingredients

Cookies
2½ cups flour
2 cups sugar
2 eggs
1 stick of butter
4 tbsp. lemon juice
1 lemon zested
15 oz. ricotta cheese
1 tsp. salt

Glaze
2 cups powdered sugar
3 tbsp. lemon juice
1 lemon zested
2 tbsp. almond milk

Instructions

Cookies
1.  In a medium bowl combine flour, baking powder, and salt. Set aside.
2.  In large bowl combine butter and the sugar. Using an electric mixer beat butter and sugar until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating until incorporated. Add ricotta cheese, lemon juice, and lemon zest. Beat to combine. Stir in dry ingredients.
3.  Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from oven and allow to cool on baking sheet for 20 minutes.

Glaze:
1.  Combine powdered sugar, lemon juice, lemon zest, and almond milk in a bowl and stir until smooth.
2.  Dip the top of the cookies into the glaze, let dry then dip again.
